    Gluten is literally the Latin word for "glue" ... Yes, really.

    I'll post up a longer answer on the blog shortly, but meanwhile the short one is ...

    Gluten is a protein composite which gives elasticity to dough, helping it to rise and to keep its shape, and often giving the final product a chewy texture.
